I have two recipes from friends and clients who love to try new foods with great ingredients. Here they are if you would like to try them.
Pie Crust bake at 375 degrees for 8-10 minutes
1/2 cup ground oat flakes
1/2 cup flour (any kind)
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp vanilla
1/4 cup ground flax seed
1/4 apple sauce
Pumpkin Pie Filling bake at 375 degrees for 30 minutes (until firm)
2 cups canned or cooked pumpkin
3/4 cups brown sugar
1 1/2 cups water
6 1/2 Tbsp corn starch (I’d use arrowroot powder or use eggs)
1 tsp all spice
1/2 tsp salt
1/4 tsp ground cloves
1/2 tsp ginger
Combine all ingredients in a saucepan over medium heat. Stir constantly until mixture begins to thicken. Pour into pre-cooked crust and bake.
Pumpkin Bread in a Bowl (can be gluten free)
– 1/3 cup of of canned pumpkin (or cooked pumpkin)
– 3/4 cup milk of choice
– 1 cup flake cereal (I like spelt flakes, but bran, corn etc.. will work. Some people have even used oatmeal)
– 1/4 to 1/2 rsp pure vanilla extract
– 1/2 tsp of cinnamon
– 1/8 tsp of salt
– Sweetener (such as stevia, sugar or even maple syrup)
Optional: Chocolate chips, Pecans
Blend all the ingredients together. The cereal will have a thin consistency at first, but if you leave it in the fridge (after blending) for even just 10 minutes, it starts to get really thick. The longer you wait the thicker it should become.
