Wheatless Weight Loss made tasty :)

How do you lose those winter pounds to look good for summer while strutting around in that bathing suit you love?

As most of you know, wheat is not a part of my diet, except when it’s my birthday. Which, as you know, comes around several times per year 😉

Removing wheat and substituting it with beans is one of the most effective and healthy ways to drop pounds fast.

Here is a delicious soup recipe for you to add to your nutrition plans.

1 3/4 cups red lentils, soaked in 8 cups of boiling water for 20 minutes, then drained, set aside

Fry lightly – about 4 minutes- in 2 tblsp olive oil:
1 1/2 cups minced onion
2 garlic cloves
1 bay leaf
1 tblsp dried italian herbs or oregano

5 cups chicken or vegetable broth and the soaked lentils, cook covered for about 10 minutes or until lentils are soft but not mushy
Add 2 cups diced tinned tomatoes including juice, bring to boil
Finish by adding 1/4 fresh lemon juice and 5 cups loosely packed fresh baby spinach leaves, stir and serve immediately

Serve with a warmed crusty (wheatless) bread, a chunk of feta cheese and kalamata olives
